Cutting Cake Patisserie is a Leeds-based cake-making business run by husband-and-wife team Mark Shipway and Nang Kham Mai.
We met at Thomas Danby College in Leeds where we were both studying craft baking, patisserie, and cake decorating. Kham Mai went on to gain further qualifications in chocolate and sugar technology, while Mark worked for four years at a local patisserie, helping to supply over 200 wedding cakes and many times that number of celebration cakes each year. We set up Cutting Cake together in May 2007.
For seven years from August 2007 we sold our cakes and handmade chocolates at several farmers' markets and numerous one-off events in Leeds and the surrounding area. In May 2014 our project moved into a new phase when we decided to concentrate on the wedding cake and celebration cake side of our business. We still make chocolates to decorate some of our cakes and for other special requests but we no longer have a stall at the farmers' markets.
